Ode to Kim Vollendorf

We had our friends Chris and Jill Merrick over dinner tonight. Chris and Del are in school together and Jill and I have become good friends. But for dinner, we had all the elements that qualified it as a "Kim Vollendorf Dinner".  Sean and Kim (pictured above) use to have Del and I over for really yummy dinners while we were dating in college. It was a time of great encouragement and edification with a very Godly couple. Thank you both for the impact you have had on our lives! Items #1 &#2 are both items we had with the Vollendors so I thought I'd share them with you!! Here is what we had: (I'm including the recipes so that others can enjoy the goodness)
Item #1: Chick-a-Babies
3oz pkg softened cream cheese
2T. melted oleo
2C. cubed deboned chicken
1/4 t. salt
1.8 t. pepper
2T. milk
1T. onion
1 8oz can pillsbury crescent rolls

Blend cream cheese and melted oleo until smooth. Add chicken, milk, salt, pepper, and onion. mix well. separate rolls into 4 rectangles. spoon 1/2 C. chicken mixture into center of each roll. Roll 4 corners of dough together. Brush with 1T. oleo and bake on ungreased pan for 20-25 min @ 350 degrees.

Item #2: Homemade Bread
This actually just came out of a box. Del threw all the ingredients into the bread maker and added water. 2 1/2 hours later....Homemade Bread!! You can't beat it!!

Item #3: Strawberry Pie
1/2 C. sugar
1 1/2 C. water
1/4 C. corn starch
Cook all these items on the stove until clear and thick, stirring until all lumps are out and liquid has gelled.
Add 1 small pkg strawberry jello to the above mixture
Put the pan (with mixture in it) in fridge to cool
When cool, add strawberries (fresh or frozen)
Put in 2 baked pie crusts and put in fridge to set 1-2 hours.
Top with cool whip!

We also had a salad...but you can put one of those together however you like it! Enjoy!!
