Recipe of Death: Peach Mango Salsa

Yep...It happened again! This time it was my right hand, middle finger...and I didn't even notice it until it was too late! (I'm sure these posts really make you want to come over to my house for dinner!)
But, the recipe that caused this little mishap is too good not to share! Tuesday night we had, what I like to call, "Tilapia Tuesday". So, naturally...I tried to recreate the last meal I had at Bonefish Grill...Tilapia with Peach Mango Salsa!

Mango, Peach, and Pineapple Salsa:
(*notice the amount of chopping needed...hence the reason why I call it "Recipe of Death") 

INGREDIENTS:
2 mangos, peeled, seeded and chopped
2 small peaches, halved, pitted, and cut into 1/2-inch dice
4 tomatoes, chopped
1 white onion, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 cup diced fresh pineapple
1 cup chopped fresh cilantro
1 clove garlic, 
minced
2 tablespoons lime juice
1 teaspoon salt
2 tablespoons white sugar, or to taste
3/4 cup water

DIRECTIONS
Place the mango, peach, tomato, onion, red pepper, yellow pepper, pineapple, and cilantro in a mixing bowl. Stir in the garlic, lime juice, salt, sugar, and water. Cover and refrigerate at least 1 hour before serving.

It is super yummy to eat with chips...but here is how we ate it tonight:
What a great healthy meal! (until I added in Del and I's secret pleasure, Texas Toast!!)
I highly recommend this recipe! I think it will be even better in the summer when all the fruits and veggies are super yummy!

Yep! I'm starting to see little scars forming on the tips of my fingers! Ha ha!!

Chelsea--why don't you take a break from recipes that require using knives as part of the preparation??? Spoons are much less dangerous. : ) Hope your finger feels better.

Yes! We had a successful night of "cooking" last night! Del grilled some hamburgers! It was a good and pain-free night!
