Dainty Manicotti

Ok, so that's not the real name for it...but I have never felt so dainty making an Italian dish, as I did when I made this one.

The real name for the dish is: Homemade Manicotti
and I got the recipe from Gina's Weight Watcher's Recipes.
No, I am not on Weight Watcher's, I just happened to stumble upon this blog one day, and it looked so good. So, I thought, "I love spinach manicotti...and since this one is "healthier"...I'll try it."

I felt so dainty because you had to make your own "crespelles" (which is just a fancy word for Italian Crepe)...but I kept saying it over and over again as I was making it...trying to add to the dainty-ness.

But once I made my first one...I knew that this was not going to be an easy process. I mean, who knew being dainty could be such hard work?! All that being said...if your first one turns out like this....don't worry, mine did too.
But, I do believe I got daintier as time went on! :)
{Did I really just use "got" & "daintier" back to back in a sentence?}
*Correction: I became daintier as time went on! {Better.}

Ohhh....Ahhh....Soooo Daaaaiiinnntttyyy!!

Then you just take your dainty little manicotti "shells" and fill them with this yummy manicotti mixture. It calls for spinach, but I think it would still be good without it.

Burt was no help...and since he was laying right in the MIDDLE of the floor, I had to daintily prance around him as I made this Oh So Fancy Meal!

But when you have all your Dainty Manicotti Rolled up, you place them in a 9x13 pan, and cover them with marinara sauce and mozzarella cheese!

Bake for 20-25 min @ 350, and Viol'a!...a perfectly dainty meal that even your manly husband will enjoy!
