YUMMY Pumpkin Bars

Susan, Hanna, and I got together the other night and made Pumpkin bars for Thanksgiving.
So, because they are so yummy, and because it is now "officially" the Season of Giving, I'm going to share the recipe with you. Get ready to fall in love!
Pumpkin Bars
4 Eggs
1 C Oil
2 C Sugar
Beat together the above and add:
2C Pumpkin (1-16oz. can)
1/2 tsp. Vanilla
Beat in Well.
Sift together and add to above mixture beating in well:
1/2 tsp. Salt
2 tsp. Baking Soda
2 tsp. Baking Powder
2 tsp. Cinnamon
2 C Flour
Option at this point: Stir in 1 C. nuts, raisins, or dates
(I didn't add any of these)

Bake at 350 for 10-15 min on two greased jelly roll pans (or cookie sheets with edges). The bater will be "thinnish" in the pan. Let cool and frost with the frosting below. I frost half of a pan and then flip the other half of the baked bar on top and then put more frosting on top of that. After sitting in the refrigerator a couple of hours they cut nicely into squares or bars.


Frosting:
2-8oz pkgs. Cream Cheese (softened)
2 sticks of Butter or Margaine (softened)
2 lbs. (about)of Powdered Sugar
4 tsp. Vanilla
4 tsp. Milk (this may not be needed. most of the time it is already the right spreading consistency.)

Beat together and spread on cooled bars. Store in refrigerator. Enjoy!
