Breakfast of Champions

Our sweet friend, Sarah Mayo (you know, the one that makes the really cute white v-necks!) came to stay with us this weekend because she was in town for a wedding. So naturally, I had to make something yummy for our special guest. I busted out my "Paula Deen's Best Recipes" magazine {that I've been chomping at the bit to actually use, but afraid that I'll gain 30 lbs if I make ONE of her recipes}...and low and behold, I found one that didn't call for 8 Cups of butter, 2 tubs of sour cream, and a block of cream cheese! I felt like I had struck gold!

Breakfast Omelet Quiche

Yes my friends, that is one big 9x13 pan of pure Goodness!
I checked her website and couldn't find the recipe, so let me give it to you!

Breakfast Omelet Quiche
{makes 8-10 servings}
1 (8oz) can refrigerated cresent rolls
2 Tablespoons butter
2 Jalapenos, seeded and minced
1 Green Bell Pepper, chopped
1 Red Bell Pepper, chopped
1 Small Onion, chopped
1 (8oz) package of Cooked Cubed Ham
12 Large Eggs
1 (10.75-oz) can cream of potato soup
1 1/2 Cups Whole Milk...I used skim milk and it was fine
1/4 tsp Salt
1/4 tsp Ground Black Pepper
4 Cups Shredded Extra-Sharp Cheddar Cheese, divided...I used 2 Cups and it was fine
12 slices of Bacon, cooked and crumbled
Garnish: Crumbled Bacon

*Here is what I did: I chopped the green pepper, red pepper, jalapenos, and onion the night before. And you could even cook and crumble the bacon....just to make the prep-time in the morning shorter*

Preheat oven to 350. Line the bottom of a 9x13 baking dish with crescent rolls; set aside.
In a medium skillet, melt butter over medium heat. Add jalapenos, peppers, and onion; cook for 5-6 minutes, or until tender. Remove from heat; add ham.
In a large bowl, whisk together eggs, soup, milk, salt, pepper, and 2 C {I did 1 C} cheese. Add pepper mixture and crumbled bacon, stirring to combine. Pour into prepared dish. Bake for 45-50 minutes, or until set. Sprinkle with remaining 2 C {again, I did 1 C} cheese, and bake for 10 minutes longer, or until cheese is melted. Garnish with crumbled bacon, if desired {which we did} :)

Then of course, when you have a yummy egg casserole, you have to have something sweet! So I baked some Cinnamon Rolls to go with it! These weren't anything fancy, just a Pillsbury Cinn-a-bon tube of Cinnamon Rolls! Yumm!!
